Hello, I'm looking for the button or fader for the Sampler volume on the XDJ-AZ. In the audio settings, it says ASIO XDJ-AZ 9 & 10, but I can't find the volume control for this audio output.

There is no control for this output. The Mixer itself (XDJ-AZ) doesn't offer any.
You can change the volume of the sampler via the GUI, or map/remap any slider to sampler_volume_master
